Where to hike and camp in Utah

My girlfriend and I are driving out from Virginia to SLC and than to Albuquerque in 2 weeks. We're looking at moving to either city and want to check them out before we start job hunting.

We'd like to do some hiking/camping out in SLC and Park City and on the way down to Albuquerque (maybe Canyonlands or Arches). How are the temperatures this time of year. Can you guys make an recommendations?

    Thanks!

Are you coming down the west or east side of the state on your way south?

I think the plan is the east side, as we're heading towards New Mexico. We're looking for some 2+ day hikes with good scenery.
