How come fixed gear MTB's always have one brake? I feel like brakes are pretty useful in MTB beyond being a safety feature.

If you are using your brakes properly, the majority of your braking should come from the front even on a bike with 2 brakes. You use backpedal pressure with your legs on a fixed gear to slow down the rear, and you can pop skid in an emergency. Some people ride both brakes on fixed gear, but I have never seen the need for a rear.
