if i build my own battery pack......
can i put 10 1.2 volt batteries together to get 12 volts
do the amps add together or stay the same

In series (once cell placed after the next - positive to negative - think of it as stacking), you add the voltages together but the capacity in Amp Hours will stay the same. So yes, 10 1.2 volt cells will equal 12 volts.
In parallel (positive and negative terminals of two or more cells tied together) you add the capacity together, but the voltage will stay the same, unless you construct a pack containing series stacked groups of parallel cells.
Generally you add cells in series to increase voltage, and if you want to increase capacity you just buy cells with that larger capacity to start with. It's only in extreme cases that you would want to add cells in parallel.
