    Another Thanksgiving Day that can't be beat

    Wandering mendicant roommate shows up in town, so a ride and feast are in order.

    Jump ahead to the feast:



    That's right, chicken (not Turkey, mind) enchiladas with a tomatillo/mushroom/chipotle en dobo sauce, and more than one variety of distilled agave squeezin's.

    How did we earn this cornucopia of goodness? By cranking out a ride on a perfect day up near Fort Collins.

    Oh yeah...Your buddy looks like the guy who turned a wrench on my bike and built my wheels up here in Albuquerque at Fat Tire Cycles.

    3 tblspns Olive Oil
    2 cloves garlic, chopped
    4 ozs wild mushrooms
    1/2 tsp salt
    1/4 tsp freshly ground black pepper
    1 lb tomatillos, husked and rinsed
    3 chipotle peppers in adobo sauce
    1 tblspn of sauce from above
    1 tblspn lime juice
    1/4 tspn sugar

    Heat oil, sautee garlic for 2 minutes, remove. season mushrooms w/ salt and pepper, sautee until tender, set aside.
    In a big skillet, dry-roast tomatillos over med-high heat for 20 mins, until browned all over. Transfer everything to a food processor, add chipotles and adobo sauce and pulse until smooth. Let cool, stir in lime juice and sugar. Thin with water if needed.

    (Also you can wait on the addition of the mushrooms until after everything has been blended if you desire a chunkier texture)

    This can be ladled over pretty much anything.

    Anthony, kickass thread. I don't know if it's vaseline on the lens or what, but all your photos look incredibly inviting. Hmmm. It's very probable that there's a better way to word that. Anyway. Looks like a thanksgiving well spent. I discovered that if you pour Mead into a shallow brownie pan, sprinkle cinnamon, orange and a little nutmeg on there, & heat it up on the cooktop, you get a concoction that invariably means you'll be too drunk to ride the bike you brought along to escape the family. Well, there you have it. Thanks for the pixels!
