    Gravel to ashphalt touring

    Well hello!
Recent purchase of a brodie romax steel framed gravel oriented spec bike, and I'm wanting to increase the low gearing potential. Rides beautifully with overnight gear, but I'm wanting to take it abroad to fill longer touring desires. Its an 11 speed 2x, with Grx 800 48/31 upfront and a 105 11-32T behind. Id like to get the gear inches down to something reasonable for all day climbs while loaded-without needing to change out the rear derailer. Is an 11-40T too crazy to dream on? Perhaps just an increased chain length? Rear derailer is an ultegra RX800.
    Thanks!

I have GRX with the 11-34 with the 48/31 and its plenty low for me, though I don't bikepack. The shop had a bike running 11-40 in the rear no problem.

My Otso Waheela S has a 50/34 ultegra crankset with a 11spd GRX 800 with an 11-40t cassette. Shifting is a hair wonky(maybe tuning maybe the sunrace cassette?), but nothing to really irritate me, so far.
