What all forks are there available for fat tire bikes?

Well with my neck height (6") and stack height it is probably going to kill my lefty conversion. So now trying to find a fork that will be better then the flexy spring thing I have now. Thinking the carver carbon beast might be it.

The 198 mm stack height Uber drop top clamps will be hitting the ground shortly, don't know if that changes anything for you, just FYI.....

As for being a contributor to the list, I know Walt has made a steel 29er with a Headshock attached to the top end, he could likely spread the clearance on that pretty easily

Modified early 90's vintage Manitou 1
http://forums.mtbr.com/8180121-post11.html I have been riding it for over 6 months with a fat tire (including winter snow trail riding), it has been 100% reliable thus far and provides a nice extra cusion of suspension that works well for negotiating snow trail ice-rubble left from walkers, moose, snowmachines etc.

Are you looking for a rigid fork, or suspension?
