    The annointing of the pig.

    Rosemary tied to an old, leftover wine barrel stave. I made a baste of olive oil, red wine vinegar and garlic.

    Vietnamese-influenced marinade for some delicious barbecued beef neck (an amazingly delicious cut of meat by the way!). Served with steamed brown rice and a crapload of spinach. Bon appetit!

    Your pictures have much better lighting. Surely there has got to be a way to get better pictures with an iPhone… in fact my ex-girlfriend took much better foodie pictures with an iPhone than I apparently am capable of, but she never showed me how to do it.     take the pictures outdoors. winter daylight pics are better than summer daylight pics.

    i assume it will get worse as winter settles in. night comes quick.

    Thanks for the tip…… however the kitchen in my one bedroom apartment ain’t exactly set up for outdoor photography.

    I just made my first real hot sauce. 5 Reaper peppers and 6 Scorpions, and some other 'filler' peppers not even worth mentioning (Habaneros, Jalapeno) ... it's like a 30 minute 'trip'...

    Perfect for two hungry adults:

    1 large onion
    1 large sweet potato
    1/2 can cooked black beans
    1/2 diced tomatoes
    1 small carton vegetable broth
    avocado
    small amount of fresh cilantro

    - Peel and coarsely chop onion
    - Scrub sweet potato and chop into 1/2" cubes

    - Heat large sauce pan with 2-3 tsp of olive oil on medium heat (hot not smoking)
    - Toss in onions and potato and cook for 7 mins (onions translucent / potato just starting to be tender).
    - Season cooking onions and potato with salt / pepper
    - Rinse black beans
    - Add 1/2 cup water, black beans, tomatoes, and broth to cooking onions and potato
    - Season with: chili powder (1/2 tbsp) / cumin, garlic powder, cayenne pepper, coriander, paprika (1/4 tsp each) (All depends on how spicy you like it!)
    - Bring to boil, then reduce heat to simmer and cover for 11 mins

    - Remove from heat and re-season with salt, pepper.
    - Cut avocado in 1/4 inch strips
    - Remove stems, coarsely chop cilantro

    - Add chili, avocado, pinch of cilantro, dollop of sour cream, and hot sauce of your choosing to bowl.
    - Eat and drink a good craft beer

    West African stew

    WEST AFRICAN CHICKEN STEW

    2 whole boneless chicken breasts, cubed
    1 Teaspoon Pepper
    1 Tablespoon Oil
    ½ Teaspoon Cayenne Pepper
    1 Medium Onion, chopped
    ¼ Teaspoon Cinnamon
    6 Garlic Cloves
    1 Teaspoon Ginger
    1 Large can of Diced Tomatoes – Undrained
    1 Teaspoon Coriander
    1 15 oz Can of Northern White Beans – Undrained
    ¼ Teaspoon Nutmeg
    1 15 oz Can Whole Corn
    ½ Cup Peanut Butter
    ¾ Cup Water
    ½ Cup Chopped Peanuts
    1 ½ Teaspoon Chili Powder
    ½ Small Can of Tomato Paste
    1 Teaspoon Salt
    1 ½ or 2 Sweet Potato, peeled and chopped (red)


    In 4-Quart Dutch Oven, cook chicken in oil until lightly browned and no longer pink, stirring frequently. Add Onions and Garlic. Cook and stir 3-4 minutes until onion is tender. Add remaining ingredients. Mix well and reduce heat to low and simmer for 30 minutes or so until potatoes are tender. Stir occasionally. Add water if it seems too thick.

    The solar pizzas were done in a sun oven. You can get them online from the manufacturer or Real Goods.

    Potato and spinach pizza. I followed the recipe but think it would’ve been much better as a tomato based pizza. The apple salad was delicious!
