Elixer 5 - Adjustment Advice Required

Got these on a new bike and when applying the brake the lever is touching the bars. I was trying to play around with the lever adjuster but just can't seem to get that little wheel in the front rolling sufficiently. I loosened the hex bolt and rolled the wheel and repeated this for about 10 minutes only to get around 1/8 of an inch extension. Before I take it to my LBS to "add" more Dot fluid as my first thought was that it lacked some, I would greatly appreciate some guidance/advice on the matter

^^This and you might want to mention "rolling the wheel for about 10 minutes" in case they need to undo it.

The brake system most likely has air in the line and needs to be bled to remove it and firm up the lever. Unfortunately, this is not uncommon. Since it is a new bike, I would expect them to do this without charge.
