New question here. Borealis Crestone 27.5+ or Fat?

I'm building a Borealis Crestone with 27.5 Carbondale 55mm rims. Will 55mm rims be too wide for plus tire, or should I go to 3.8 fat? If there are any tire choices that work well with 55mm let me know.

I have 4.0 cake eaters on mine with 52mm carbon rims for desert riding. Its my favorite bike. I'm not sure it doesn't get a bit more love.
