2006 Specialized Stumpjumper Expert rear shock replacement

I currently have a 7.5x1.75 rear shock. If the eye to eye and stroke is the same, can I just replace it with any shock? I was planning to get the Rockshox Deluxe Select Rear Shock 190mmx45mm Debonair if it fits

That would fit. Eye to eye is the most important, and a slight increase in stroke is normally fine. I'd say you're probably good with any 7.5x2 (190x51) shock as well, although...

There is a possibility that a longer 2" stroke shock will cause the rear wheel or rear suspension to make contact with the frame at full compression - investigate that for your bike.
