Good 26" Rims (fat tire 2.5-2.7") for rim brakes?

Got a set of fat tires for my old bike, but I don't have clearance for the rear disc (it is a non-disc frame, but I was going to buy the universal adapter). So I am no looking for some decent rims that are able to handle a 2.5-2.7" width tire. Any suggestions are appreciated.

    Thanks

Are you sure your frame (and brakes) will clear a 2.5" or 2.7" tire?

Sorry I don't have any suggestions on the rim, the wider rim-brake compatible rims I was familiar with are no longer made. I'd ask over on the fat bikes board about this.
15mm is a second-best solution to a problem that was already solved.

Yes, I mounted the wheels/tires in there, and have Magura Hydraulic rim brakes so there is plenty of clearance. I just need to swap over to rim brake rims since the wheels currently have disc specific rims.

    Thanks
