Im looking for info about the fork, the LX M560 group and the bike itself.

I bought an American Eagle Death Valley from Aardvark Cycles in Provo UT in 1999. i thought the brand was from Europe but I have never seen them anywhere else in the US.

The M560 group should have date stamps to determine the year. 3rd tier parts (behind XTR and XT) but solid and functional. The fork looks like a Rick Shox Mag 21? But hard to tell from the photo.
