You're already riding trails which are pretty new. Here's a few more suggestions. Some are newer than what you've mentioned. Some are older - but 'newish'. Hopefully something will work out for you. Basic maps for these suggestions are can be found here. Asking at Moab bike shops is always a good idea.
Klondike / Baby Steps area - There are two new trails open here. EKG and Little Salty. Basically they form a 'cross' in the middle of the Baby Steps loop. Some time spent route planning (with a map) would probably make a big difference in how much fun (maximizing singletrack) you'd have here.
Mag 7 area - Lots of newly designated singletrack in the Gemini Bridges area. A lot of these routes have been ridden in the past, but there are notable changes and updates. Whether or not you've ridden here before it's worth figuring out what's open and designated before planning your route.
Bar M area - You've ridden Deadman's Ridge, which has only become completely open this spring. The newest trail open at Bar M is the Long Branch trail. It provides a connector (loop options) between the bottom of Bar B and Deadman's Ridge (just before the final descent to the paved path) trails. Deadman's opened in two parts. Initially it was open between the Bar M rd (Lazy EZ intersection) and upper Bar B. It is now fully open all the way down to the paved path. Some springtime riders may have missed the second (really fun) half.
For those who haven't tried the new Bar M trails, a really good (non-beginner) introduction is a figure 8 loop using (in order) Lazy - Deadman's Ridge - Bar B - Long Branch - Deadman's Ridge - EZ.
Per the OP, these are all trails which have either seen new additions or just became designated this year. It's definitely not a complete list of new or newly designated Moab trails in the last few years.

I second this route. Girlfriend wanted to get out on the the singlespeeds. We figured the Brand trails would be a good choice. We did this exact loop. Certainly a bit tougher then we expected but a great loop no less.
Sovereign is awesome. Saltwash single track runes right next to it. You can use that to make a loop. You can also connect over to Cedar mountain area if you are feeling strong.
Also, there is some newish stuff over by Klondike bluffs/Baby steps. Rode EKG the other day. Very much recommend it. It's marked well but not sure if it's on any of the Lat 40 maps.
