Loosen the punch bolts, remove the top cap and pull it off. The fork can stay on the bike.

    Lefty stem...

If you have the OPI stem you need to loosen two clamp bolts, remove handlebar, then unthread the stem steerer from below the headset. Keep track of the internal and external spacers. Re-thread steerer into new stem to "snug+" tightness, replace handlebar (and torque stem face place screws per manufacturer's guidelines, usually about 5 N-M), then re-torque clamp bolts to 9 N-M.

I'm a fair wrench at home and regularly change "regular" stems on my older bikes, but I paid LBS the first time with a Left OPI so I could watch to see how this is done.

Thank you guys, I have one more question: how to raise and down saddle (not seat post)?

    Lefty stem...

All seat post- saddle brackets are different, but usually change angle of saddle by slightly backing off both bolts or screws slightly to release the clamp pressure, then loosening one bolt/screw two turns or so and tightening the other same amount, several iterations, till desired angle is achieved, the torquing both screws to recommended setting. I run saddles about 2-degrees nose down.
