Short answer:

All Mountain - Industry catch-phrase most commonly used to describe a bike (typically 6", but slacker short travel trail bikes apply), but also applies to riding style, helmets, trails, clothing, etc.

Enduro - Term for a type of racing--mostly-downhill (not DH) multi stage. Sometimes you will see all mountain bikes/trails/etc, described as enduro but its less common to see a race described as an all mountain race.
