XT crankset conversion to single speed

I just got an XT crankset hoping to use the middle ring only, but when I remove the outer ring the nuts and bolts that hold the middle ring on are too long to snug it up. Can I fix this without running the big ring or a bash guard? Any ideas would be greatly appreciated.

either use single speed chain ring bolts (LBS >$10)
or chain ring bolt spacers (few buck less than the bolts)

    Sugino Steel Bolts

My LBS had some Sugino steel bolts that are awesome. The steel allows a much higher and better torque to be put on the chainring than aluminum. Not much is more annoying than having your chainring come loose...

I always use Truvativ dual hex head steel chainring bolts that come with the spacer. Works great and less than $10 for 5 bolts and 5 spacers.

Go to any bike shop that sells bmx bikes. They have SS chainring bolts all day long.
