Cheap Singlespeed Crank
I'm currently building a budget singlespeed and I need a good cheap single ring crank. I was wondering if I can just take the middle ring of my Shimano FC-M361 Acera cranks and put it on the big ring position using single chainring bolts. Will this work?

Use single chainring bolts, but leave the ring in the middle position. It will give you a better chainline.

So just take off the inner and outer chainrings? When I install the crank back in, do I have to put spacers?

if you use the stock chainring bolts you will need to put spacers/washers.
another option is to put in a bashguard/ring.

Shimano Deore M590 is fine and usually around €60 together with its external bottom bracket (€50 if lucky).
