Why do I have to run more psi with Flow rims?

I bought a set of King wheels with Flow rims. LOVE the hubs, btw. So, I swapped my UST tires from my XT wheels on to the Flows. All taped up, new valves, etc and they went on with a hand pump - all very easy. I filled up to my regular 30psi up front and out back just like I always do and off some of the bigger stuff I do the rear tire folded waaaaay over. In fact I scraped up the rim in one spot and the sidewall had evidence of being folded way over.

I actually run less psi with my other tires on Mavic Crossmax wheels (and used the tire that was folding over with the Flows on the Crossmax as well without problems) and don't have this happen.

    So what gives?
