All very nice. I don't know much about photography. But, how do you guys know how long of an exposure to use at night?

great question. hopefully someone with more expertise will answer concisely. i'm not very versed in night photography.

for me, the advantage of digital photography is trial & error is basically free, along with the ability to examine/review immediately. IOW, you can take shots & based on the results of those shots then make adjustments as necessary then re-shoot the same scene (if necessary).

beyond that, (& especially for still/static situations), i think most DSLR have a basic +/- indicator that gives you some clue as to whether your shot is likely to be under/over exposed. i look at that to make sure the meter display doesn't indicate the settings are grossly over or under.

^^EDIT: also, i guess i should have pointed out, my response assumed you are asking mainly from the perspective of shooting Manual. if you're shooting in Aperture mode, the camera will try to adjust the shutter speed automatically to what it believes is proper exposure.

You capture an image, see what it looks like on the LED screen, adjust if necessary, repeat. Film largely disappeared some time ago. Now you know a lot more, eh?
