Tannersville, PA - easy loops for a new rider

Girlfriend likes to take an October trip up that way, but to the outlets for shopping. I've gotten her into riding, and she brought up the idea of bringing the MTB's along for a long day trip up that way in mid October.

Looking on some maps, I see that Big Pocono State Park is right there, but on the PA site, doesn't mention anything about riding, only hiking and horseback riding.

Can anyone rec any loops close to the area we'll be around, that are:

    1. Easy for a new rider (she's new)
    2. Very scenic - hope to see some awesome views
    3. Length can vary, maybe loops with options to go longer/shorter?

Thanks to all for the help. I guess someplace to park would be a good idea too, not from up that way.
