    Maple syrup production

    A friend gave us a five gallon bucket of maple sap. Long story short, they got the idea to make their own syrup but this has been a banner year for sap. They are exhausted from the boiling process. So, we took a tiny bit off their hands.

    Here is the starting point--5 gallons of sugary water.

    Three hours in and I can see why we were given the sap. This is a tedious process. The outdoors were failing me so I had to shift indoors. This is all that is left of the original 5 gals (~1.5 gallons). Since I moved inside, I've doubled my boiling capacity. I've had my vent fan on, so hopefully the moisture and any residue will be in check.

    Have no idea. The person that gave it to us said the color darkens as the time into spring increases. Apparently I need a hydrometer to get the density correct. Since I'm fresh out of hydrometers, I'm going with the close-enough-to-syrup method.

    The local park where I ride has a maple syrup festival every spring. Hundreds of the maple trees are tapped and plastic tubing runs down the hill to plastic buckets or large stainless steel containers. They're pretty treacherous where they cross a trail. Slippery on a bike and a trip hazard for hikers & horses, but I digress...

    They make syrup then then thousands of people come to the park to eat pancakes. We do a group ride around the event. Good turnout this year, close to 20 riders. We get syrup then go to a bar owned by one of the riders and make pancakes & drink.

    I made syrup for the first time this spring. I ended up with 1/3 gallon of finished syrup and it is delicious! I only tapped 2 trees and ran them for 5 days. I have lots more trees and easily could have run the taps longer, but until I get bigger storage vessels and a better way to boil, that was as much as I was willing to do. It took a LONG time to boil down.

    I would actually kill you for your syrup. Yeah...that is right. That is like the manliest breakfast ever conceived. They only way it would be manlier is if you have butchered the pick and ground the corn for the grits. Still bacon, pancakes, grits and homemade maple syrup: turns it up to eleven!

    If you killed me, you wouldn't get my recipe for the grits--they are so good! butter, two types of cheese, and cream. One taste and you would know why people from the south fought the civil war to protect the recipe.

    No teasing. Recipe or GTFO! Southern food is an enigma to me. I have no connection to it having grown up in Canada and living currently in northern mexico, USA (AZ). Carne Asada sure, beans that kick ass sure but southern food, I got nothing but beans and rice and new years day black eyed peas and greens.

    By the way, I grew up in the south, lived a summer with my Vietnamese grandmother, have watched endless cooking shows, and love to eat food I can't find locally when I travel.

    As such, I've developed a love for food and have transformed it to my own fusion style of cooking. I buy cook books but only use recipes for anything other than raw inspiration. If I wasn't half decent at my day job, I would go to culinary school to learn more.

    Possibly a question for the beer forum, but since there appear to be syrup experts here goes. I was wondering if anybody knew of a recipe or anyone who has fermented maple sap or syrup into a tasty beverage?
    I don't know why,... it's just MUSS easier to pedal than the other ones.

    You collect sap until the tree stops producing. the season is weather dependent (cold nights and warm days) and can last as long as a month and as little as a week. It takes about 100 to 1 in the reducing process.

    I used to make maple syrup & I'm about to date myself.

    I had a clydesdale horse and a wooden sleigh with 2 big wooden vats on it. I had steel buckets and some wood and some steel spiggots. When the vast were full we would pull the sleigh right into the sugar shack(yes, that's where the name came from). the vats would tip into a big flat shallow steel pan 6 feet wide and 12 feet long with a wood fire under it. it took 2 people to keep the fire stoked. Cutting and splitting firewood all day.

    We made syrup, sugar and taffy. taffy is about half way between syrup & sugar. (throw the hot syrup in the snow)

    We sold the syrup for...

    ... here's where I date myself ...

    $8:00 a gallon.

    Now I am all fired up and jealous. Here on the left coast real maple syrup, (when you can find it) is $10-12 a pint jar.

    You can always find 'maple-flavored' stuff "made with 2% real maple syrup". That junk is a sick joke.

    I grew up with Faple syrup 'cause that was all we could afford. I hated it. When I tasted real maple syrup for the first time, I heard angels singing.
