When to hydrate, amount, during XC races

Ok here is my perceived problem. I like to drink when I am out riding, it just feels good and I always want more, but I do not want to over intake water during a race or be carrying anything more then I need. I feel like my mouth gets dry rather fast because my jaw is hanging open a lot, so is it this dry mouth feeling when I need water or..??
    Thanks

I suppose taking in more water than necessary is better than not enough, but then again, carrying way more water than you need isn't efficient either. I started chewing gum on rides and it keeps my mouth from getting dry so fast. Really a big difference when I forget to grab some and take off. Less than a mile in I realize my mouth is dry and that I forgot gum.

I follow the advice of Tim Noakes and simply drink to thirst.
