Quail Hollow would be the closest. It's only 3 miles, and pretty easy riding. West Branch is a bit further away, and has more trails (somewhere around 10 miles) with some fairly difficult stuff. Reagan Park in Medina has some pretty decent trails as well.

Of course we've had two weeks of almost daily rain. So nothing is really rideable now.

52 miles from Canton to Loudenville gets you to Mohican MTB trails. 24 miles of great trails.
Check out the Spoke Junkies on Facebook. They do a lot of group rides.

CAMBA member here (technically an IMBA chapter now, also). I'm pretty sure there are other CAMBA members from the Canton area as well.

A good site to reference for local trail conditions is Ohiosingletrack.com Forums if you haven't heard about that already.

I'll second the above posts, Quail Hollow is your closest (but also the least challenging), then followed by West Branch (great, well kept, challenging trail system). Vultures Knob is also somewhat close to you (excellent as well) and then you've got Mohican State Park farther south (best in Ohio, IMO), and Royalview up north in Strongsville.
