Hey dude! I'm 173cm, so I think 5'7" as well?!
I've been running a 35mm stem and it feels great, nice and aggressive, weight out the back, still enough to load up the front. Over the last week I've been trying the bike with a 45mm stem and to be honest, it feels great as well. Been riding mostly trail stuff, not too aggressive so not sure how it'd feel over steep terrain. So yeah, you have plenty of room to move with a medium size frame, I wouldn't go small. The bike feels so nimble and playful in this size, I reckon it would be a mistake to go with a S. It's waaaay more playful than my SB6c used to be.
Also, the seat tube is so short that I'm running a 125mm dropper post and there's heaps of post showing. My inseam is about 32", so even if you have shorter legs, you should be fine with both a 125mm or 150mm.
