No firsthand experience in Emporia myself, but this might get you on the right track for some information. Most bike shops in Kansas do rides so you might get a hold of them.

    Emporia, Kansas Bicycle Guide

If you are going to be there for a while and can venture out, plenty of good ones 50 - 100 mile radius. You might stop in at a visitor's center and pick up "Kansas Trails A Thousand Mile Adventure" put out by the Kansas Trails Council and also a Kansas Bicycle Map put out by the state.

Camp Alexander is pretty good, not too long, but worth the ride. Also, there's the river trails right in town just north of the university. Fun trails. Call Matt Brown at High Gear Cyclery. Nicest bike shop guy I've ever had the privilage of riding with.

Emporia is really known for their gravel roads if you're into that too. Check Strava to find the trails and for some good gravel sections.
