It depends on what you consider close to I-70. When I lived in St Louis, one of my favorite places to ride was Castlewood State Park.

You can also check out Gateway Off-Road Cyclists - GORC - STL Mountain Biking Organization for listings of many other trails in the St. Louis and central MO region. Here's a link to their map page showing the location of the trails they have maps and documentation on. GORC - Trail Maps - Overview

Big second for Landahl. Rhett's Run in Columbia is so close to I70 you can almost hear the traffic. Prolly 10ish miles of singletrack in a city park.

Landahl is great, but Clinton Lake just west of Lawrence also has amazing single track. Info here Lawrence Mountain Bike Club - Local Trails: Clinton North Shore Trails

+3 for Landahl. Lawrence has two good ones; Clinton Lake, and if you take a few extra minutes to venture into Lawrence, there is the river trail. The river trail is mostly groomed dirt with few major obstacles, but if you're in decent shape you can clear the nearly 10 minutes in well under an hour. There is also Perry Lake, but that's a bit off the beaten path and requires a park pass.

Topeka has a decent trail, too. It is not too far off of I-70 and runs around the Governor's mansion.
