    Old 27 inch to CX

So I have an old Panasonic 12 speed 27 inch road bike and while its fun the wheels are kinda beat. Now I've read elsewhere that I can put 700c wheels on the bike as long as my brake calipers adjusted to the rim. That aside would I the be able to fit a modest CX tire? Also what is the narrowest chain I can run on those 12 speed cranks? Will 8 speed work alright? Thanks!

I did that swap on my old Schwinn Sports Tourer last spring:

Just needed a little work on the calipers to lower the pads a few mm to hit the rim. I stretched the frame a little to fit a 130mm rear wheel and also stuck in a 10sp cassette and chain, keeping the old front crank (from the 5-6sp days). An 8sp chain will work fine, that is what I first ran after rebuilding the bike a few years ago.

Actually with the 10sp chain, that old triple crank (early '80s vintage Sakai) now works better than before. I used to get chain rub like in the middle ring and the smaller cogs on the 6sp freewheel I used to run (w/ 8sp chain). Now with the narrower 10sp chain, I can run all 10 cogs in the middle ring w/o rubbing.

My first cross bike was my road bike. Steel Atala from the lat 70's. it had lots of room for cross tires which weren't that much bigger than road tubulars from what I can recall. I had short reach calipers on it too with a drop bolt on the back.
