Nothing really. I can take any of my road clinchers, mount up a CX tire, and go ride on gravel, grass, and smooth trails without worry. That being said most people gerun a higher spoke count on a set of wheels dedicated for CX use than they'd generally have on a set of wheels dedicated for road use only.

Exactly what he said. When I had canti brakes on my Crux I ran a set of Mavic Ksyriums with no problems at all.

Also, now with disc brakes becomming more popular on cx bikes, it's easy to run 29er mountain wheels on them. I run an old set of Roval mountain wheels that I had sitting around on my disc Fuji...works great!

I'm running a pair of Mavic Aksium's on my Blade with no problems.
