I did it on a fatty 70 before, because just like you I couldn't stand the bosses when I mounted disc brakes.
Cut them off leaving like 1/8" on the fork legs and use a file or a dremel for the rest.
The bosses are solid, but be careful not to cut into the actual fork leg, since the aluminum is VERY thin!!!
If you plan to get the fork painted it's better to leave more material on the fork and to smooth the area with some body filler.
Mine was a pain in the behind, since I polished the entire fork and any imperfection would've showed.

Neat job! BTW are they really yellow zip ties? That's attention to detail.

Yep...that's possible. I COMPLETELY removed mine.
You can't be heavy handed though... (I guess it helped me being a Dental Lab Technician here)
As you file them slowly down, if done with proper care all you'll have left is the weld seam in the shape of a square.... I removed those too and polished the entire fork...not even at closer look you could tell the fork had Canti-bosses...
It's an all day job though, so be patient.

Yeah...if I needed a fork now I'd rather spend some extra $$$ not have the hassle of cutting the bosses off again!
I only did it because I already had the fork and then switched to disc brakes...
