Check out http://www.mountainbikebill.com Great site with trails all over So Cal. Probably check out Daley Ranch for climbing, LPQ (Los Penasquito), and maybe Mission Trails?

If you want to get up into the mountains Cuyamaca, and for nice techy riding (go with friends) Noble Canyon.

That is a lot of bike for just XC riding. You might want to take a bike like that to Noble.

Oye chingon! Mt.Bike Bill's site will give you a lot to chew on and you should definitely take that rig up to Big Laguna Trail and Noble Canyon. Epic rides virtually designed for your bike. (Snag yourself a dinger-bell for your bars.)
