You won't be too far from Big Bear, and you shouldn't be much further from Wrightwood / Angeles Crest. Kennedy Meadows at the south end of the Sierras will be a couple hours away.
There was a thread on this a year or so ago. If I recall, there's also some possibilites around Cajon Pass.
Go to desertmud.com and check out the trail writeups for that area. Lots of climbing. Specifically, I tried the Hesperia Lakes to Butler Peak ride Thanksgiving weekend 2005 and it kicked my A$$ -- 8500 feet of climbing, 65 mile ride. http://www.desertmud.com/bike_details/EventID/60
Not much single track; mostly fire roads to my knowledge. However, if you e-mail the website owner (Matt, aka TractorUp), he can give you details. He is very knowledgable regarding that area, having rridden all over the north side of the San Bernadino mountains.
I have ridden out on the NorthEast side of Apple Valley a few times and thought the trails were pretty good. They are narrow and lightly marked in an attempt to keep the motorcyclists off them, but once you find them they are a lot of fun. I know that there are also trails in the Oak Hills area and also in the SouthEast of Apple Valley. I suggest visiting the various bike shops and seeing if they can help you find the trails. I think Bear Valley Cycles is one of the shops that sponsors some racers, but I'm not positive.
Also as others have noted you are relativley close to Big Bear and that has a good selection of trails during the warmer months.
It's not a great place, but it's not horrible either. If you work at it you can have a good time.
There are plenty of trails around. There are also some decent trails near Silverwood Lake which is pretty close. You do have my sympathy on your move to Victim-ville. good luck.
