Where can I buy parts to go from 160mm to 180mm disc brakes?

After having ridden a bike with much better stopping power, I have decided to consider changing to larger rotors. It looks like I can get adapter bolts for the post mount on the fork and an adapter bracket for the IS rear mount, along with larger rotors. The question is where can I get these goods? I've been to two of three LBSs and somehow it seems I know more about it than the guys at the shops.

Shimano 525s. Not great, I know, but I thought it would be an easy upgrade.

And they ARE much better than the Louise's on my 1999 Cannondale. The Louise's were good back in the day but stopping power on good discs now is just incredible.
