Fuji Sunfire For 330 Lb Person?
Would a Fuji Sunfire be suitable for someone who weighed about 300 lbs and with a rack and pannier setup carrying an additional 40 lbs?

What kind of riding? So, this is an entry hybrid to begin with, for a 180-220 lb rider, probably not suitable for anything outside of gentle fire road.
As a 330# rider, you're really going to push the limits of this bike very quickly if you plan to do moderate trail riding. Even then, the miles will wear on this bike.
Things you may encounter:
Tires: you will want more aggressive, knobbier tires right away
Wheels: trouble keeping them true and broken spokes
Braking: rim brakes will fade and won't slow you on moderate mountain descents
Frame: don't take it off any drops
Drive train: this is a bottom of the line, entry level drive train, miles may wear on it - bearings, chain, derailleur pulleys etc will wear quickly
Assuming you want to do at least moderate mountain biking, recommend you get a beefy AL hard tail frame with at least shimano SLX or Sram x9 component set, with a stout set of all mountain wheels like an Easton haven, stans flow ex, or Mavic crossmax sx, and a 34mm stanchion fork with a tapered steerer and at least a 15mm thru axle.
