    Homebrew Recipe Help

    I'm looking for a little help from those of you that put together your own home brew recipes.

    My local nano-brewery brewmaster kicked down some specialty malts to me last week. They just did a Scottish Ale and a Milk Stout, so I'm thinking these are left overs from one of those.

    1lb of Briess 50L Special Roast Malt
    1.25lb of Victory Malt
    .75lb of Crystal 120L Malt
    .5lb of Caramunich Malt

    So what do I make? Everything I brew comes from brew kits. I do partial mash extract brewing. These malts scream brown ale, maybe a Scottish ale.
    My thoughts for a 5 gallon recipe -
    .5lb of Special Roast
    .75lb of Victory
    .75lb of Crystal 120L
    .5lb Caramunich
    7lb liquid malt extraact
    3 dry malt extract
    2oz East Kent Golding bittering
    2oz East Kent Golding aroma
    Wyeast 1028 London Ale yeast
    My guess would be around 1.090 OG
    What do you think? Add in some chocolate malt? Different hop suggestions?

    Looks fine. My preference looked at this recipe would be no aroma hops. But, it should still taste awesome with some aroma...

    Looks like a good recipe for a Scotch ale to me. I just did one with Wyeast 1728 that came out pretty good.

    Upon review- I'll add: you might want to add some sugar to dry it out if the LME you use doesn't ferment dry...

    But, if you are looking for a malt bomb, leave the sugar out.

    I'm also considering the Dennys Favorite 50 yeast for its ability to accentuate the malt. I'll hit up the brew store tomorrow after my ride and probably brew after the 49er game on Sunday.
