DH in Texas? is almost an oxymoron (sp) But yes there is one trail called the Wichita trail it's pretty horrible but if you drive to ST. Jo the Bar H ranch is fun. Ft Sill in Lawton is fun but he trails are hard to find. Try the local shop when you get there. Texoma Cycling Center should be able to help.
