I am planning to spend some time back home this Christmas and I am looking for some trail advice in the metroplex. I have been riding now for four years since moving to N. GA so I would love to find something meaty, but I would also like something beginner-friendly to introduce my brother to the sport. He lives in Colleyville, so something on the north side of town would probably be easier. I have thought about the Ray Roberts area, but I'd like some local input.

You can find all the local trail info at www.dorba.org. There is a trail summary page with descriptions, pictures, directions and current trail conditions there. There is also a forum where you can acquire folks to help show you around.
I live in the HEB area next to Colleyville. My main places to ride are the Horseshoe and Northshore trails on Lake Grapevine. They are quite tasy. The Ray Roberts trails have lots of rocks, so be prepared. If your brother is truly starting out, take him for a spin at either L B Houston or River Legacy parks. They will allow him to get his feet wet before you hurt him good. ;) Depending on when you are here, I could possibly meet you for a ride. Christmas is kind of crazy, but you can be sure that we'll be out riding.

I forgot all about the Dorba site. I'll check it out. I'll also drop a note there when my schedule firms up to see if I can hook up with any of the locals for a ride while I am in town. I was thinking of a day trip to St. Jo if it isn't too cold.

Bar H is a great place to go. Lots of variety and good stuff up there. I wasn't sure what kind of time frame you would be looking at. Some other day locations to consider are Tyler SP, Cameron Park in Waco and Cleburne SP. At some point the weekend of Christmas or New Years I will probably head to Waco.

I will be heading to family in Longview for the Christmas weekend and I forgot all about Tyler State Park. Is it in pretty good shape these days?

I rode Tyler on my SS a couple of weeks ago. It was perfect! That will probably be a great option for you since it handles rain so well. The sand out there makes it ridable very quickly after a rain. Its one of the best trail systems we have.
