Jackets/Vests/Soft Shells - Winter Clothing

What's the best for winter riding - temps 30s - 40s - a lightweight jacket - like a windbreaker or a vest of some sort. What do you think of the soft shells? I read somewhere a vest is better for winter riding. What do most of you wear for winter riding?

Ok, maybe a longsleeve, heavier jersey with a lightweight jacket. There are two things to consider: Is the jacket breathable, and can it fit easily in a camelbak?
